Ingredients for Short Ribs:
4-6 Beef Short Ribs
1 large carrot, rough cuts approx. 3 in chunks
2 celery ribs, cut into 3 in pieces
1 yellow onion, quartered
1 head of Garlic
4 Sprigs of Thyme
2 Bay Leaves
2 c. Red Wine
3 c. Chicken or Beef Stock
Kosher or Sea Salt
Ground Black Pepper

Ingredients for Polenta:
3 c. Water
1 stick or 1/2 c. of Butter, unsalted
1/4 c. Heavy Whipping Cream
3/4 c. Polenta or Medium/Coarse Ground Cornmeal (Golden Pheasant or Moretti (Bramata are brands chef recommends)
1 c. Plain Greek Yogurt
Kosher or Sea Salt
Ground Black Pepper
